  Sample Recipe: Appetizer

Meatballs – Lower fat

 This appetizer is usually served around Christmas time, but is really good any time.

Directions (Makes about 2 dozen meatballs)

3 lbs Lean hamburger (at least 91% lean)

 

6       garden green onions finely diced

 

Salt and pepper

 

Place the hamburger in a bowl, mix in the onions and salt and pepper to taste.

 

Use a spoon to scoop out enough hamburger to make a small ball when rolled between your hands. Continue making the balls of hamburger and brown them in a large skillet. You will need to keep turning them as they brown. When all of the hamburger balls have been browned remove them from the skillet and drain the fat away (place them on a paper towel).

1 jar  Chili sauce

 

1 can   Cranberry sauce (jellied)

 

 

In a large pot place the chili sauce and cranberry sauce. Heat the sauce mixture until it is melted together. Add the hamburger to the sauce mixture and let it simmer over low heat for about an hour. Remove them from the heat and serve in a smaller dish that can be kept warm.

 

 

The hamburger balls can be made ahead of time and refrigerated or frozen. When you are ready to serve them, simply reheat the mixture, stirring frequently. Be careful not to apply too much heat or the mixture will burn. They are usually served with toothpicks.
